Dailey Crafton, a homebrewer from Yonkers, NY, sent us a log covered in a unique mixture of wild yeast and bacteria, which we used to ferment 5 gallons of beer. The log gave our final beer some really unique flavors, definitely one of our best brews yet.

Dailey will be using the yeast from the log to start Levenaut Beer Co., a brewery in Yonkers. Levenaut will only make one beer, a saison/ farmhouse style beer with log yeast.
